Stepwise pictorial guide to prepare delicately flavoured Zucchini Paratha, an Indian flatbread made with grated zucchini, whole wheat flour & a few spices.

  • For the Dough:
  • 2 Cups Whole Wheat flour
  • Salt to taste
  • 1 teaspoon oil
  • ½ teaspoon Cumin Powder
  • ½ teaspoon Kalonji seeds (Nigella seeds)
  • ½ teaspoon Amchur powder (Dry mango powder)
  • 1 teaspoon grated ginger
  • 2 Green chillies, finely chopped
  • 1½ Cups Shredded Zucchini
  • ¼ Cup Red Bell Peppers, finely chopped
  • Required water to knead the dough (zucchini has quite a bit of water)
  • For frying Parathas:
  • Required Oil/ Butter/ Ghee to fry parathas
  1. Combine all the ingredients under the section “For the dough” in a mixing bowl.
  2. Now add enough water to make a soft and pliable dough.
  3. Divide the dough into 8 equal balls.
  4. Dust with flour and roll each ball out into a round disc.
  5. Heat a griddle over medium-high heat.
  6. Place the rolled paratha on the griddle and cook on till you see brown spots on both sides.
  7. Smear some oil, ghee or butter while cooking the parathas.
  8. Cook till you see some golden brown spots on both sides.
  9. Once done remove from the griddle and keep the parathas warm by stacking them in an aluminium foil or a kitchen towel while you continue to make the rest of the parathas.
  10. Serve hot with any curry, yogurt or pickle.
