Ingredients

  • Bread:
  • 2 1/3 cups all-purpose flour
  • 2/3 cup white granulated sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • Zest of one orange or lemon
  • 1 large egg lightly beaten
  • 4 tablespoons unsalted butter melted and cooled to room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 cup Orange Juice
  • 1 cup milk at room temperature
  • 3/4 to 1 cup fresh cranberries coarsely chopped
  • 1/2 cup walnuts coarsely chopped
  • Glaze:
  • 1 cup confectioners' sugar
  • 1-2 Tablespoons orange juice

Instructions

  • Preheat your oven to 180 degrees C (350 degrees F). Take a loaf pan and butter, or spray with a nonstick vegetable spray.
  • In a large bowl whisk together all the dry ingredients- flour, sugar, baking powder and salt.
  • Add in the chopped cranberries, chopped nuts, orange zest and stir to combine.
  • In a separate bowl whisk together the wet ingredients- beaten egg, melted butter, vanilla extract, orange juice and milk.
  • Stir the wet ingredients into the dry ingredients to combine.
  • Pour into the greased pan, Smoothing the top.
  • Bake for about 45 to 5o minutes or until a toothpick inserted into the centre of the cake just comes out clean.
  • Remove from oven and let cool on a wire rack.
  • Glaze: Add 1-2 tablespoons of orange juice to the powdered sugar and mix well.
  • Drizzle over cooled bread, slice and serve..
