Instructions

  • Peel and grate the carrot. Grind to a fine paste.
  • Grind Capsicum & herbs to a fine paste.
  • Add 1 cup batter to the carrot puree (For Saffron Colour) & 1 cup to the green paste (For Green Colour). Mix well. Leave 1 cup batter as such (For White colour).
  • Grease the idli plate with oil and fill idli plate with plain batter, carrot batter and green batter. I'm using a mini idli mould, you can use regular idli plates.
  • Steam for 7 to 8 minutes until done.
  • Carefully take out idlis from the sides and serve it with chutney or sambar.
  • Today I'm serving with tricolour chutneys to go with the theme.

Notes

  • You can grind the veggies separately & later mix with idli batter or grind along with the batter.
  • Use any veggies of your choice to get required colours.
  • You could even pin them on snack pickers & serve in kids parties.
  • Cocktail Idli Skewers: Toss in mini idlis with some idli Podi, thread the cocktail skewers with idlis, onions and coloured bell peppers alternatively. Heat the griddle pan and brush with a little oil. Now, grill the skewers on low heat, turn the sides to evenly roast. Grill until bell peppers and onions are roasted and slightly charred. Serve as your cocktail snack or starter.
