Vegetable Masala Khichdi | Spicy Moong Dal Khichdi Recipe

Ingredients

  • 1 Cup Rice Sona Masoori
  • 3/4 Cup Yellow Moong Dal
  • 1 Tablespoon Oil

Dry Spices for Seasoning:

  • 1 Star Anise
  • 2 Bay leaves
  • 3 Cloves
  • 1 inch Cinnamon Stick
  • 2 to 3 Kapok Buds Marathi Moggu

Other Ingredients:

  • 1 Medium Onion finely chopped
  • 3 Green Chilies slit lengthwise
  • 1 Large Tomato diced
  • 1 tsp Ginger Garlic paste
  • 2 Carrots diced
  • 1 medium Potato diced
  • 1/4 Cup Frozen Green Peas
  • 1/4 Cup Frozen Beans
  • Handful of Mint leaves
  • Handful Fresh Coriander finely chopped
  • 1/4 tsp Turmeric Powder
  • 1/2 tsp Red Chilli Powder
  • Salt to taste
  • 4 to 5 Cups Water

Instructions

  • Combine Rice and Moong Dal and wash until water runs clear.
  • Heat Oil in a pressure cooker over medium heat.
  • Add the dry spices to the oil and sauté till you get a nice aroma.
  • Immediately add in Onions and green chillies and sauté for 1 minute.
  • Now add chopped tomatoes and ginger garlic paste.
  • Sauté and cook for about 2 minutes.
  • Add rest of the veggies, salt, turmeric powder and Red Chilli Powder, Rice-Dal mixture and mix well.
  • Now add required water and adjust salt.
  • Close the pressure cooker and cook for 1 whistle and turn off the heat.
  • Open the lid once the pressure subsides from the cooker.
  • Serve hot with any raita, Kadhi or Chaas.

Notes

  • Khichdi is usually and soft mushy, so you can use 5 cups of water for a liquid consistency. If you want it to be a little dry, then use 4 cups of water for the given measurements of Rice and Dal.
  • You can substitute rice with basmati rice,  brown rice, rice rava or quinoa.
  • Adjust spices according to your taste.
  • You can use any vegetable of your choice.
  • You can also make this recipe using Tur dal (split pigeon peas) or whole moong beans with husk.
