Mixed Sprouts Curry Recipe using mixed sprouts to make a healthy, protein packed curry. Okra added gives a unique taste & has an excellent fresh flavour.

Ingredients

  • 2 teaspoons oil
  • 1 Dry red chilli broken
  • ½ teaspoon mustard seeds
  • ½ teaspoon Cumin seeds
  • 1 Large onion finely chopped
  • 1 to 2 Green chillies finely chopped
  • 8 to 10 garlic pods peeled
  • 8 to 10 Okras trim ends and cut into 1 inch pieces
  • 1 Tomato roughly chopped
  • 2 cups Mixed Sprouts washed and drained
  • ¼ teaspoon Turmeric powder
  • 1 teaspoon Red Chilli powder or Sambar powder
  • Required salt
  • 2 tablespoons finely chopped Coriander

Instructions

  • Heat oil in a pan over medium heat.
  • Add dry red chilli, mustard and cumin seeds and let crackle.
  • Add chopped onions, green chillies and garlic pods.
  • Sauté till the onions turn transparent.
  • Add in the okra pieces and sauté for 2 minutes.
  • Add chopped tomatoes and sauté till the tomato turns mushy.
  • Add turmeric powder, red chilli powder (or sambar powder), salt and give it a nice stir. If you do not have sambar powder, mix coriander powder and chilly powder and add this instead.
  • Add sprouts and mix well.
  • Sauté till the onions turn transparent.
  • Add in the okra pieces and sauté for 2 minutes.
  • Add chopped tomatoes and sauté till the tomato turns mushy.
  • Add required water and close the lid of the pressure cooker and cook for one whistle.
  • Turn off the heat.
  • Once the pressure subsides, open the lid of the pressure cooker and garnish with coriander and serve.

Notes

1. Adjust spice levels to suit your taste.
2. Squeeze some lemon juice or you can add amchur powder for a tangy flavour.
3. You could also include some ginger garlic paste for a different flavour.
4. Use any beans of your choice for sprouting.
