Egg, a simple piece of heaven with its silky yolk contained in a light yet firm white. I am sure no fridge goes without a pack of eggs in any part of the world. It is an extremely versatile ingredient and can be prepared in the most simplistic manner to an exceptional level of complexity with flavours and textures introduced on many layers. I am assuming at this point that I created sufficient hype to introduce my next recipe :P, I bring forward today my simple yet sizzling masala egg fry recipe (a first among many upcoming egg recipes!!).

My take on a egg fry is a quick and simple fix when you have sudden unexpected guests at home. All you need to do is to halve hard-boiled eggs, lightly coat them with marinade and shallow fry. It can be served as a starter or as a side dish for rice. This egg fry is super spicy with flavours of red chilli powder, ginger, garlic, cinnamon, cloves and cardamom. The fresh aromatic spices infused together with rest of the ingredients, gives a perfect coat to the boiled eggs. This is a perfect solution for people who don’t like the bland taste of egg yolk. There is a burst of flavour along with the creamy texture of a perfectly cooked egg. I came up with this recipe one fine Sunday evening when I didn’t feel like spending time in the kitchen but wanted to whip up something nice for dinner. The result was this fantastic simple dish. My kitchen is overflowing with homemade spice blends and pastes, I just mix and match to get creative with taste and the result pleases my taste buds very very much :D.

Step by step process in making masala egg fry:

 

This recipe calls for very few ingredients. Immerse eggs in water and boil long enough for the egg white and then the egg yolk to solidify. It may take 12 to 15 minutes to get a hard- boiled egg. Adding ½ teaspoon of salt to the water while boiling prevents cracking as well as making the eggs easier to peel.

Shell out the boiled eggs and slice them carefully into two halves. Mix ginger garlic paste, red chilli powder and required salt. This is the marinade.

Apply the marinade to the eggs on the yolk side as shown below.

Heat oil in a wide pan over medium heat and place the eggs in the pan with the masala-coated side in contact with the pan.

Egg 4

Shallow fry till you get a nice brown colour and change sides so that the eggs get fried evenly on all sides. This may take 5 to 7 minutes.

Sizzling masala egg fry is ready to be served with rice and rasam or it can also be had as a starter.

Ingredients

  • 3 hard-boiled eggs
  • 1 teaspoon ginger garlic paste
  • 1 teaspoon Red chilli powder
  • Required salt
  • 1 Tablespoon vegetable oil

Instructions

  • Shell out the boiled eggs and slice them into two halves.
  • Mix ginger garlic paste, red chilli powder and required salt. This is the marinade.
  • Apply the above marinade to the eggs on the yolk side.
  • Heat oil in a wide pan over medium heat and place the eggs in the pan with the masala-coated side in contact with the pan.
  • Shallow fry till you get a nice brown colour and change sides so that the eggs get fried evenly on all sides.
  • Sizzling masala egg fry is ready to be served with rice and rasam or as a starter.

Notes

Do not overcook eggs as they become hard and rubbery.
Adjust spices to suit your taste.
Adding ½ teaspoon of salt to the water while boiling eggs prevents cracking as well as making the eggs easier to peel.
