Are you someone who don’t really get excited about radishes? Not me!!… I find them so pretty and irresistible, coming in all sorts shapes, sizes, and most importantly the range of colours. You just need to get the right recipe to see radish’s full potential. A few of my favourites are to include them in Sambar, Paratha, chutney or sliced thin onto salads. Today’s share is a simple, light, and delicious Indian flat bread with this humble root veggie that packs some finger licking flavours. Throw in some radish grate to the flour, add in some of your favourite spices from your pantry and voila!!….. You’ve got your own custom made Easy Mooli Paratha Recipe!!
Steaming hot Mooli Parathas can be prepared as stuffed paratha or without stuffing by incorporating shredded radish while kneading dough. This makes life so easy especially if you are a beginner.
You can also incorporate other grated vegetables like beetroot, cabbage, zucchini, carrots, capsicum, cauliflower etc. or just make a Plain Paratha to go with any curry. Get creative and come up with your favourite spice combinations with different veggies….choices are endless!!

Easy Steps to prepare Easy Mooli Paratha Recipe:
- Start off the process by grating radish.
- Finely chop ginger, garlic, green chillies and coriander. Set aside and start working with the dough.
Preparing the Dough & rolling to make parathas:
- In a mixing bowl, add whole wheat flour and salt. Mix well.
- Add a teaspoon of oil, grated ginger, finely chopped garlic, green chillies and radish grate to the flour.
- Combine all the ingredients to incorporate all the ingredients well into the flour.
- Now, add water little by little to make a soft and pliable dough. Amount of water depends on the moisture content of the radish.
- Divide the dough into 8 equal parts or to whatever size you want to have.
- Roll each part into a smooth ball, dust it with some flour and keep it aside.
- As the dough sits, radish leaves moisture and the dough will become soggy. So, don’t wait too long once the dough is ready.
- Now, roll out each ball into a round disc. Dust flour to help you roll out the parathas. The parathas should be a little thick as shown in the picture below.
NOTE: It is important that you make the parathas as soon as your dough is ready.
Frying Parathas on a Griddle:
- Heat a pan over medium-high heat.
- Place the rolled paratha on the pan and cook till you see brown spots on both sides.
- Smear some oil, ghee or butter while cooking the parathas.
- Press the paratha with the back of a ladle to cook evenly. Flip and add oil on the other side too.
- Cook the paratha till you see some nice golden brown spots on both sides.
- Once done, remove from the pan and transfer to a plate. You can keep them warm by stacking them in an aluminium foil or a kitchen towel.
- Continue to make the rest of the parathas.
- Serve hot Mooli Paratha with any curry, yogurt, pickle, Sweet n Sour Tomato Chutney or even tomato ketchup will be fine.

MOOLI PARATHA WITHOUT STUFFING

Ingredients
For the Dough:
- 2 Cups Whole Wheat flour Chapati atta flour
- Salt to taste
- 1 teaspoon oil
- 1 Tablespoon chopped Garlic
- 3 Green Chillies finely chopped
- 1 teaspoon grated ginger
- 1 Tablespoon chopped Coriander
- 1½ Cups Shredded Radish
- Required water to knead the dough
For frying Parathas:
- Required Oil/ Butter/ Ghee to pan fry parathas
Instructions
- Combine all the ingredients under the section “For the dough” in a mixing bowl.
- Now add enough water to make a soft and pliable dough.
- Divide the dough into 8 equal balls.
- Dust with flour and roll each ball out into a round disc.
- Heat a pan over medium-high heat.
- Place the rolled paratha on the pan and cook on till you see brown spots on both sides.
- Smear some oil, ghee or butter while cooking the parathas.
- Cook till you see some golden brown spots on both sides.
- Once done remove from the pan and keep the parathas warm by stacking them in an aluminium foil or a kitchen towel while you continue to make the rest of the parathas.
- Serve hot with any curry, yogurt or pickle.
My Notes:
- Radish will ooze out some water. So, be careful while adding water to knead the dough. Make a smooth but not sticky dough.
- Don’t let the dough sit for too long because radish gives out water and the dough will get too sticky. So, make the dough just about 5-10 minutes before making the parathas.
- Adjust spice levels with green chillies to suit your tastebuds.
- Include any other spices of your choice to go with this combo….Just Experiment!!
