Okra Stir Fry Or Bhindi Fry

Okra fry V1nI’m totally rejuvenated after a weeklong splendid trip to turkey. Just arrived today around noon and my body is dead tired but I’m determined to post today. I came home craving for something spicy after having Turkish food for a whole week. I picked up some vegetables from the Indian store on our way back home from the airport and decided to make a quick and simple Okra Stir Fry Or Bhindi Fry to have it with rice and Andhra spicy mango pickle. Can you imagine how heavenly it would taste?

So before moving on to the recipe……I’m so excited to share the magical experience we had in Turkey. The highlight of our trip was Pamukkale and Cappadocia, two attractions that blew my mind off.adore.

Pamukkale means cotton castle in Turkish. This is a magical place that commands fascination. It has limestone formations, which look like snow. The water filled in these limestone formations is warm in some areas. The view from these pools is amazing. From a distance it looks like an enormous iceberg. White mineral pools and blue warm water – amazing coexistence. The formations are so beautifully placed as to almost appear man made. Walking barefoot on these rocks full of water was the only painful episode but it was worth the pain. It is a novel experience to swim and bath in the hot water from the spring. The cascade of slowly brimming and overflowing pools is stunningly beautifulsmile.

What can I say about Cappadocia, I had never seen a landscape like that anywhere before. It looked like something on the moon or out of Star Wars….just mind blowing!! To see the dramatic landscape of Cappadocia from the ground is unforgettable. But to see it from above, soaring among the coloured valleys, over the tip tops of the stone pillars, peeking into the pigeon holes and caves with snowy mountains in the distance, and seeing the sky cloaked with hot air balloons is nothing short of spectacular. The hot air balloon ride was the climax of our trip to turkey. It was a splendid experience. Hope to make a detailed post shortly with pictures!!

Back to the recipe, this simple shallow fried Okra Stir Fry Or Bhindi Fry complements any meal and can be served as an accompaniment to the main course. It has a dry and crispy texture. You just need a handful of ingredients to make this crunchy and delicious Okra Stir Fry Or Bhindi Fry. Let’s quickly move on to the recipe for Okra Stir Fry Or Bhindi Fry!!

Step-by-Step process in making Okra Stir Fry Or Bhindi Fry:

 

  • This recipe works best with small sized tender okras. Wash and pat dry Okras with a kitchen tissue. Trim both the ends of okras.

  • Chop okras into half an inch pieces.
  • Roughly chop onions.
  • Grab all the ingredients for the seasoning.

  • Heat oil in a wide skillet over medium heat.
  • Season it with the mustard seeds, cumin seeds and dry red chillies.

  • Once the mustard seeds splutter, add okra pieces and stir occasionally.

  • Once okra pieces turn slightly brown, add onions, yoghurt and curry leaves. (It may take about 5 to 8 minutes for browning.)

  •  Sauté for another 5 to 7 minutes and add red chilli powder and salt.
  • step6 Stir for 5 more minutes or till you get the crunchy texture to the okra pieces. The spices should blend well into the okra pieces.

  • Turn off the heat, garnish with coriander and serve Okra Stir Fry Or Bhindi Fry with roti, chapathi, paratha or along with rice and sambar or rasam.

Okra Stir Fry Or Bhindi Fry

Okra stir-fry or Bhindi fry, made with a handful of ingredients complements any meal and can be served as an accompaniment to the main course.

Ingredients

  • 1 Tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 2 dry red chillies
  • 250 grams tender okra wash, dry, trim ends and chop into half inch pieces
  • 1 medium sized onion roughly chopped
  • 1 Tablespoon yoghurt
  • 1 teaspoon red chilli powder
  • Required salt

Instructions

  • Heat oil in a wide skillet over medium heat. Season it with the mustard seeds, cumin seeds and dry red chillies.

  • Turn off the heat, garnish with coriander and serve with roti, chapathi, paratha or along with rice and sambar or rasam.

Notes

Using a sour ingredient removes the sliminess of the okras.
Feel free to adjust spice levels with chilli powder to suit your taste.
Always cook the okra uncovered. Any trace of water on okra makes it slimy.
Always cook okra on low-to-medium heat.

    I know how this magically enchanting country must have enveloped you in its charm. I have been there many a times and every time there is a huge element of surprise for me there. Eagerly awaiting your post on Turkey. I will especially look forward to the dishes you sampled there.
    Hats off girl you had the energy to dish out this delicious looking okra, just after your journey.       You make me speechless with your lovely comments and in a way that motivates me to work even harder:)I must admit it was quite hectic to do the post on the same day but some force pushed me:)…that’s why a simple one;-)…Now that you reminded me of Pulla Reddy sweets, I want to fly home at once…ooh can’t wait to have them!!Hopefully I will be able to do a post on Turkey..editing pics is too time consuming and I have taken a few hundreds I guess…but unfortunately not many food photos because I was totally drained down by dinner time:)..Again thanks a ton dear…and a big hug from me:)

      Thank you Helene!!..Didn’t want to mix up the turkey pics with okra..moreover you know it’s a lot of editing..will do it leisurely;-)Hope I will be able to do a separate post:)We do travel a lot to the neighbouring countries but turkey was on the list since long…never could take a whole week off..especially my husband:).. but now I feel a week is also too short to explore Turkey:)..May be as you are right- could be the influence of the habits of Germans;-)
