Egg Bhurji Masala – Egg Porutu Andhra Style | Scrambled Eggs Indian Style | Anda Bhurji Recipe – This Indian spiced scrambled eggs recipe is an egg lovers delight, full of health & deliciousness….High on proteins, really quick & easy to make!

Egg Bhurji is the spiced Indian version of scrambled eggs. It is also called Anda Bhurji. Anda means egg in Hindi. Eggs are just the perfect ingredient to make a quick meal, be it breakfast, lunch, brunch or any party dish. Eggs are so versatile to make just about anything and takes only 10 minutes to make most dishes.

Egg bhurji requires minimal ingredients available in your pantry. I usually make this whenever I am short on time or don’t have veggies in the refrigerator. This recipe is completely different to the Mumbai style egg burji….yes, it’s more of an Andhra style recipe aka Egg Porutu or Kodiguddu Porutu. It is a personal favourite of mine since childhood and will always remain my favourite.

Easy Steps to follow for

Egg Bhurji Masala:

Let’s start making Egg Bhurji Masala:

  • To a moderately hot pan, add in some oil. Add finely chopped onions and green chillies to hoot oil. Sauté until the onions turn slightly soft and brown.
  • Now, add in some turmeric powder, red chilli powder and a few curry leaves (optional).
  • Give it all a nice mix and add in half a cup of water so as to bind the added spices with the onion mixture. Add enough salt for seasoning.
  • Let it cook for a minute. It starts to boil and half the water is evaporated. This is the time to break in some eggs. Add in 3 medium sized eggs. Crack the egg open directly into the pan one by one.
  • After adding in the eggs, gently stir the egg yolk. Keep the heat on medium low and just cover with a lid for about a minute.
  • Now, open the lid and turn sides of the egg part.
  • Close it again with lid and cook for another minute.
  • Open the lid and scramble the eggs to your preference, fine, chunky, it’s up to you. Preferably you don’t want to completely scramble the eggs but want to have some chunks of it. But if you prefer to have it very fine, then go ahead and stir vigorously. But, I like to have a few big chunks here and there, coated with the spicy onion mixture.
  • The Egg Bhurji Masala is done and ready. Turn off the heat and add in some fresh coriander.

Serving Suggestions:

  • This is perfect with rice, roti or bread.
  • The best thing about the Andhra Style Egg Bhurji aka Egg Porutu is that it pairs well with plain rice and when combined with Pappu Charu, a runny lentil stew is a classic combo from the Telugu cuisine and it’s all time favourite.

Ingredients

  • 2 Large Onions Finely Chopped
  • 3 Green chillies Finely Chopped
  • Few Curry leaves Optional
  • 1/2 tsp Turmeric Powder

  • 1/2 Cup Water
  • Salt to taste
  • 3 Medium Eggs
  • A little Fresh Coriander For garnish

Instructions

  • Keep the heat on medium low and just cover with a lid for about a minute.
  • Now, open the lid and turn sides of the egg part.
  • Close it again with lid and cook for another minute.
  • Now scramble the eggs to your preference, fine, chunky, it’s up to you.
  • The burji is done and ready. Turn off the heat and add in some fresh coriander.

Notes

  • Adjust spice levels to suit your taste.
  • To retain the fresh flavour of the coriander leaves, add them towards the end.
  • You can also whisk the eggs separately in the bowl before adding in the pan makes sure the eggs scramble perfectly.
  • You can cook the egg bhurji to the consistency you like. I like mine well cooked and with big chunks of egg here and there. You can scramble eggs to your liking.
  • As a variation, you can include chopped mushrooms or bell peppers.

    This egg bhurji masala looks so tempting. I have recently turned vegetarian and now trying to be a vegan but eggs and cheese are two things because of which I am finding it difficult to become vegan. After seeing these photos of yours I think I will never be able quit eating eggs.

    A different way to make egg burji. Its like making shakshuka but a bit different. This recipe with curry leaves is what I’d love to try. Perfect also as a light meal.

    Love this Andhra style bhurji. Looks and sounds delicious. Bhurji is my favourite as generally I find it difficult to flip omelettes. 😀
    Jokes apart a Bhurji is one of the best accompaniments to any meal. Will definitely try making Andhra style.
