Egg White Vegetable Masala Omelette

Egg white veggie omeletV1With this quick recipe, there’s no excuse not to have a healthy breakfast. Or are you looking for a quick, easy and healthy lunch idea or even a quick and light supper with a nice green salad? And yes, it would be an “Egg White Vegetable Masala Omelette”. High in protein, low in carbs and completely fat-free…it’s literally the best thing you could start your morning off with. A delicious basic omelette minus the fat and cholesterol—that’s the kind of recipe every health-conscious cook needsnotsure.

Eggs can be prepared by several methods, but the trick is to not over cook them. When prepared correctly, they are fluffy and soft, and with a few minor changes – can be made really healthy. To make this egg-white omelette even more delicious, you can embellish the dish in creative, savoury ways with simple toppings or fillings. But hey…the whole point of making this is to keep it as simple as possible, too lazy to do anything elaborate. So today I’m using carrots, onions, green chillies and some herbs. But usually I like to use capsicum, sometimes mushroom and spinach too.

This egg white vegetable masala omelette would make a perfect match to the gongura pachadi or sorrel leaves chutney I have in the refrigerator and some piping hot rice. Feel free to use any veggies of your choice. Just ensure not to add too many veggies that the omelette becomes very dense and end up with scrambled version. I love omelette that is more traditional, with just a few veggies and herbs for texture and flavour.

The secret ingredient which I used in this egg white vegetable masala omelette is chickpea flour. This acts as a binding agent and also gives a nice flavour and texture to the omelette. It is also quite filling. With slight variations, you can also make this egg- and gluten-free chickpea flour omelet, which is also vegan. It’s plant-based dish is made from chickpea flour, also known as garbanzo bean flour. The nutritional profile of the flour is fantastic, it is high in protein, iron, and fibre. Will share the recipe shortly!!

Finally the desi in me always asks for a spice kick, for which I have used red chilli powder, ginger garlic paste and garam masala. They also impart a nice flavour to the egg white vegetable masala omelette and tastes delicious.

Making a great omelette takes some practice, so don’t worry if your first few attempts end up looking more like scrambled eggs. No harm done — they’re just eggs! —and you’ll get better each time you trysmile.

Step-by-Step process in making Egg White Vegetable Masala Omelet:

 

You will need the following to make egg white vegetable masala omelette:
  • Finely chop onion, green chillies, curry leaves and coriander.
  • You can either grate or finely chop carrot.

  • Separate egg whites and transfer to a bowl. If you do not know how to separate egg whites, please refer here. Source: Wikipedia.
  • You can include one or half  yolk if you prefer (optional).

  • Combine all the ingredients other than oil and stir with a whisk until just blended (do not overbeat). Please read the recipe card at the end of the post for ingredients list.
  • All the ingredients should mix well and there should be no lumps.

  • Drizzle oil in a pan over medium-high heat. Once hot, reduce flame and pour some of the egg mixture into the pan and swirl it around to spread evenly.
  • Cook until edges begin to set (about 2 minutes) and the underside is slightly browned.
  • Sprinkle some more vegetables on top (optional).

  • Slide front edge of spatula between edge of omelet and pan. Gently lift edge of omelet and flip over to let the other side cook.
  • Continue cooking until center is just set (about 2 minutes).

  • Loosen omelette with a spatula and carefully slide omelette onto a plate.
  • Enjoy with any bread, roti or Paratha. You can cut it into cubes and serve as an appetiser or have it along with rice and sambar or rasam.
  • My favourite is omelet with rice and pickle (aavakaya, mango pickle). If you haven’t tried it yet, you are missing out something in life, so do give it a try!!

Egg White Vegetable Masala Omelet

Egg White Vegetable Masala Omelette is a delicious basic omelette minus the fat and cholesterol with all the goodness of the veggies you embellish the dish with.

Ingredients

  • 3 egg whites and a tiny bit of yolk (may be one or 1/2 of the yolk, but it is optional)
  • 1 Tablespoon Chickpea flour
  • 1 medium sized Onion finely chopped
  • 1 to 2 green chillies finely chopped
  • 2 Tablespoons Coriander finely chopped
  • ½ teaspoon Red chilli powder
  • ½ teaspoon Ginger garlic paste
  • ¼ teaspoon Garam masala powder
  • Sprinkle of salt to taste
  • 1 to 2 teaspoons olive oil to make omelette or use any oil as per your choice

Notes

1. Pour the egg mixture only after the pan has heated well. That means, if you add a drop of water, it should sizzle.
2. Whisk the egg mixture well, just before pouring it over the hot pan and do not cook on high flame.
3. You can sprinkle grated cheese over the omelet as soon as you remove it from the pan. The heat of the omelette, lightly melts the cheese.
4. You can add any other vegetables of your choice or shredded chicken.
5. The chickpea flour acts as a binding agent and also gives an unique taste and texture to the omelet.
6. Adjust spice levels with green chillies or red chilli powder to suit your taste.
