When I posted how to make sprouts at home, I had few requests for sharing some Indian sprouts recipes. Mixed Sprouts Curry Recipe is a very simple recipe to prepare healthy and nutritious curry with fresh flavours. The okra (bhindi) added gives a unique taste and complements the sprouts so well. There are obviously many ways to cook this healthy curry, and the one shared here today is one of the simplest method using minimal spices and using mixed sprouts instead of just one. It can’t get better!!
Sprouts are rich in fibre, protein, minerals, vitamins and enzymes, that’s the reason to be known as miracle food. More than eating the grains by itself, sprouting them improves its nutritional value considerably. The protein content, fiber content and vitamin content increases drastically when a grain sprouts. I love sprouting for few reasons. Apart from being healthy, it’s fun watching the seeds germinate and come up with those little lives. They also come so handy to just add in a handful for sprouts to any dish to boost up the nutritional value. Sprouts are easier on our gut than the unsprouted form due to high oxygen content. For this reason sprouted beans are very good for kids too.
Usually I sprout a large batch and use some for salad and store the rest in the refrigerator to use later. In case your sprouts have been for a couple of days, it is better to cook it and consume them. This will prevent from food poisoning. You can use sprouted beans in many recipes that calls for beans. Once is a while Sprouts dosa is a very healthy alternate to regular dosa. Check out the recipe for Moong Bean Sprout Chaat for a delicious salad. You can make sundal with sprouts, a very healthy evening snack for kids. I have also used sprouts filling for Pani puri, which was quite different and we enjoyed a lot.
Today I have used sprouted moong beans, black beans and chickpeas for this recipe. You could use a mix of any legumes but you do need to make the sprouts a couple of days before.

Step-by-Step process to follow for Mixed Sprouts Curry Recipe:
Planning is required if you want to make this curry. You need to start the process of sprout making a couple of days before. Check out how to make sprouts at home and then proceed.
- Grab all the ingredients required for Mixed Sprouts Curry Recipe.
- Finely chop onions, green chillies and coriander.
- Peel garlic and trim the ends of okra and cut into 1 inch pieces.
- Heat oil in a pan over medium heat. Add dry red chilli (broken), mustard and cumin seeds and let crackle.
- Add chopped onions, green chillies and garlic pods.
- Sauté till the onions turn transparent.
- Add in the okra pieces and sauté for 2 to 3 minutes.
- Add chopped tomatoes and sauté till the tomato turns mushy.
- Now add turmeric powder, red chilli powder (or sambar powder), salt and give it a nice stir. If you do not have sambar powder, mix coriander powder and chilly powder and add this instead.
- Add sprouts and mix well.
- Add required water and close the lid of the pressure cooker and cook for one whistle.
- Turn off the heat.
- Once the pressure subsides, open the lid of the pressure cooker and garnish with coriander and serve.
- Mixed Sprouts Curry Recipe is ready to be served as side dish for roti, naan, paratha or can be had with plain rice. You can even add some crushed papdi, sev and finely some chopped onions to this curry and serve as quick chaat.
Mixed Sprouts Curry Recipe |Sprouts Kuzhambu
Ingredients
- 2 teaspoons oil
- 1 Dry red chilli broken
- ½ teaspoon mustard seeds
- ½ teaspoon Cumin seeds
- 1 Large onion finely chopped
- 1 to 2 Green chillies finely chopped
- 8 to 10 garlic pods peeled
- 8 to 10 Okras trim ends and cut into 1 inch pieces
- 1 Tomato roughly chopped
- 2 cups Mixed Sprouts washed and drained
- ¼ teaspoon Turmeric powder
- 1 teaspoon Red Chilli powder or Sambar powder
- Required salt
- 2 tablespoons finely chopped Coriander
Instructions
- Heat oil in a pan over medium heat.
- Add dry red chilli, mustard and cumin seeds and let crackle.
- Add chopped onions, green chillies and garlic pods.
- Sauté till the onions turn transparent.
- Add in the okra pieces and sauté for 2 minutes.

Notes
2. Squeeze some lemon juice or you can add amchur powder for a tangy flavour.
3. You could also include some ginger garlic paste for a different flavour.
4. Use any beans of your choice for sprouting.
