Chaat Style Mashed Potato Toast Sandwich

Chaat Style Mashed Potato Toast Sandwich V1Do you like spicy Indian food? Ever wondered how you could make a tasty snack for yourself especially when you want it really spicy? The key to a hot, tasty Indian sandwich is the chutney. Making a good chutney can change your sandwich habits for good. Today I’m going to share Chaat Style Mashed Potato Toast Sandwich, my second post for the blog hop theme “SANDWICHES”. For this I’m using two chutneys, coriander mint chutney and dates tamarind chutney. This grilled sandwich is easy sandwich recipe, but a bit long in making because we have to boil potatoes, but it’s totally worth all the time spend for preparing the filling and we can also use the same filling to make paratha or aloo tikkis.

I love sandwiches and fix them up quickly at home quite often. I love the versatility of the sandwich – dump anything and everything into it is my motto. I keep experimenting with the fillings that I use in sandwiches and, often, have been surprised by the wonderful taste of some random ingredients thrown together. Sandwiches aren’t just what were packed for lunch when we were little. But that could be why we’re so nostalgic for delicious filling smushed between two pieces of bread.

A well made potato sandwich has a delicate crunch to the bread, with a soft interior of savoury potato, It is served with sweet and tangy chutney and a spicy green chutney.

If you want to know any city’s culinary specialties, you don’t typically go to restaurants for great food, you go to the roadside. Sometime back, I had the opportunity to spend 2 weeks in Delhi. My daily commute took me past hawkers selling the food I craved. The temptation to sample the street food was almost overwhelming, but I didn’t dare.!!!

The street vendors making these sandwiches with old fashioned sandwich irons. These are made up of two square cast iron plates forming a clamshell against each other. Long cast-iron handles are attached to the plates so the vendor can easily flip them and take them out of the fire. The vendor uses this so he can make many of them very quickly.

At home it can be nowhere close to complicated. If you know how to make a grilled cheese sandwich, you pretty much already know how to cook a potato sandwich.

In my version of Chaat Style Mashed Potato Toast Sandwich, I add a layer of chutney right to the sandwich. Not only is it a beautiful presentation but it also makes it easier to eat as it requires less dipping. You can always serve Chaat Style Mashed Potato Toast Sandwich with an extra dash of chutneys!!

This post is a dedication to the humble sandwich, which had saved me during my school and college days – offering a quick but tasty bite.

Step-by-Step process in making Chaat Style Mashed Potato Toast Sandwich:
  • Boil Potatoes, peel and mash them.
  • Finely chop green chillies, red onions and coriander.
  • Combine mashed potatoes, chopped green chillies, red onion, coriander and salt in a bowl.
  • Use a potato masher or fork to mash the potato pretty well, but it should have some lumps remaining for texture.

  • Spread the butter on one side of each slice of bread. (I’m not using butter but you please use)
  • Spread the green chutney and sweet and sour tomato chutney or “dates tamarind chutney“.

  • Add a layer of about 1/4 cup of potato mixture over the chutney.

  • Put the other slice of bread over this, butter side out. Again no butter but you please use!!

  • Put it on a grill and toast till golden brown.

Ingredients

  • For the Filling:
  • 2 potatoes boiled and skinned
  • 1 green chilli finely chopped
  • 1 small red onion finely chopped
  • ½ cup Coriander finely chopped
  • Required salt
  • To make the Sandwich:
  • 2 slices of bread
  • 1 Tablespoon butter
  • 1 Tablespoon Green chutney
  • 1 tablespoon dates tamarind chutney or <a href="https://www.masalakorb.com/sweet-sour-and-spicy-tomato-chutney/" title="Sweet Sour and Spicy Tomato Chutney">sweet and sour tomato chutney
  • A pinch of Chaat masala

Instructions

  • Combine all the ingredients under the list "For the filing" in a bowl. Use a potato masher or fork to mash the potato pretty well, but it should have some lumps remaining for texture.
  • Spread the butter on one side of each slice of bread.
  • Spread the green chutney and dates tamarind chutney.
  • Add a layer of about 1/4 cup of filling over the chutney.
  • Sprinkle some chaat masala.
  • Put the other slice of bread over this, butter side out.
  • Put it on a grill and toast till golden brown.

Notes

Adjust spice levels with chutneys and green chillies.
If you want to serve kids, totally avoid green chillies.
Feel free to include or exclude ingredients as per your taste.
