Off to Date Nut Ladoo!!
Easy Steps to follow for
Date Nut Ladoo:
- Pit and chop dates.
- Gather all the nuts you would like to include in the Date Nut Ladoo. I have almost take equal quantities of each nut.
- Roughly chop the nuts.
- Dry roast the nuts in a pan, one by one over low heat. They should be roasted but should not change the colour. Every nut needs different roasting time, so make sure to roast them separately.
- Once roasting is done, you can run the nuts together in a food processor/blender just for a few seconds to get a coarse powder. You get half powder and half chunks of nuts. This will give a good consistency to the ladoo and also taste good.
- Heat a little ghee in a pan over low heat, add in the chopped dates and roast till you get a soft mixture like you see in the picture below (to your right). Smash dates while you are mixing them.
- This will take about 8 to 10 minutes depending on the texture of the dates (soft or hard).
- Mix dates paste, coarsely powdered nuts and combine well. Smash with the help of a spatula to help mixing the dates with nuts.
- Sprinkle cardamom powder and mix well.
- Grease your hand with ghee, take small portions and start making balls when the mixture is still warm.
- Optionally, you can roll the balls over roasted sesame seeds.
- Serve or store in an air tight container once they cool down.

Notes
- If you want more sweet, then add brown sugar or honey. But, for my taste, this is more than sufficient!!
- You can increase dates according to your taste. Make sure to use soft dates. You can also add figs to this.
- The quantities and proportions of nuts is your choice, but maintaining the minimum ratio of dates to nuts is important.
- Start making Ladoo when mixture is slightly warm because if it cools down, you won’t be able to make the ladoos.
- You can also add pecans, raisins, dried cranberries and any dry fruits of your choice.
- While making these ladoos make sure no wet utensils or hands are used as it can spoil the ladoos and you cannot store it for long.
