Garlicky tomato onion curry with the right balance of tangy, sweet, garlicky & spicy flavours can be used as a base to all sorts of vegetable, meat or Tofu. It can also be had as it is with Plain Rice, Idli, Dosa, Puri, Roti, or Paratha.

Almost everyone who enjoys traveling is subject to what is commonly known as the post-vacation blues, which I’am experiencing right now!!

Getting back into the routine is the most difficult thing, especially after a good vacation of relaxation, but you’ve got to give yourself the best chance to get back to routine with a bit of focus and determination. I didn’t write any posts ahead of time, and I knew that when I get back it was time for me to write. I could have written the post before I left, but I just postponed, which was not a good decision. I’m pretty sure most of us postpone things to future and I’m no exception!!……..Now I’m all set to share a simple recipe today – Garlicky Tomato Onion Curry.

This Tomato Curry Will Tickle Your Tastebuds!!

Quick, easy to prepare and a great tasting dish is this garlicky onion tomato curry, with the right balance of tangy, sweet, garlicky and spicy flavours. This is a great vegetarian curry with a blend of heat and spices. Tomatoes and onion usually play an important role and form the base of most Indian curries. We generally use them to make any curry and top up with the main vegetable. This recipe requires no fancy ingredients, yet it tastes great. I usually make this garlicky onion tomato curry whenever I run out of any veggies and no mood to make any elaborate side dish for idli or dosa or roti or even with rice.

This tomato curry recipe is basic and you can play around with the spices and seasonings to suit your taste. Just one spice or herb can enhance the flavour of the curry and take it to another level. A generous dose of freshly chopped coriander as a garnish gives the curry a herby flavour. A touch of garam masala or the use of asafoetida in place of garlic completely changes the flavour of the curry. Inclusion of ginger gives this curry a different flavour. I can go on and on but for me the taste of garlic is the highlight. Now let’s move on to the recipe!!

Step-by-Step process to prepare

Garlicky Tomato Onion Curry:

  • Grab all the ingredients.
  • Finely chop onions, tomatoes and green chillies.
  • Peel the skin of garlic pods.

  • Heat oil in a pan over medium heat and add mustard seeds.
  • Once the mustard seeds splutter, add chopped onions, garlic pods and green chillies.

  • Sauté till the onions until translucent.

  • Now add finely chopped tomato pieces.

  • Sprinkle some salt and sauté for 5 minutes till the tomatoes become soft and mushy.
  • Add turmeric powder, red chilli powder and mix well.

  • Sauté for 5 minutes till the raw smell goes off and all the spices blend well to get a thick gravy.
  • Add some sugar, curry leaves, adjust salt and bring to a simmer for 2 minutes..

  • Turn off the heat and garnish with coriander and slit green chillies (optional).
  • Serve garlicky tomato onion curry with hot steaming Plain Rice, Idli, Dosa, Puri, Roti, or Paratha.

Garlicky Tomato Onion Curry - Tomato Kura | Basic Tomato Curry

Ingredients

  • 1 tbsp Oil
  • 1 tsp Mustard Seeds
  • 1 Large Onion finely chopped
  • 10 Garlic Pods peeled
  • 2 Green Chillies finely chopped
  • 3 Large Tomatoes roughly chopped
  • Required Salt
  • ¼ tsp Turmeric Powder
  • 1 tsp Red Chilli Powder
  • ½ tsp Sugar
  • A sprig of Curry Leaves
  • ½ teaspoon Garam Masala Powder optional
  • Handful Coriander finely chopped

Instructions

  • Heat oil in a pan over medium heat and add mustard seeds.
  • Once the mustard seeds splutter, add in chopped onions, garlic pods and green chillies.
  • Sauté until onions turn translucent.
  • Now, add chopped tomato pieces.
  • Sprinkle some salt and sauté for 5 minutes till the tomatoes become soft and mushy.
  • To this, add turmeric powder, red chilli powder and sauté for 5 minutes till the raw smell goes off.
  • Add few curry leaves and simmer for 2 minutes.
  • Turn off the heat, sprinkle some garam masala powder (optional) and garnish with coriander. Serve with steamed rice or roti....It also tastes great with idli and dosa.

Notes

  • Adjust spice levels with red chilli powder and green chillies.
  • Sugar helps to balance out salt and sour flavours in a dish.
  • Use of garam masala is optional.
  • If you do not like the taste of garlic, avoid them.
  • Include ginger to get a different taste.
