Hunger is a monster that creeps up unexpectedly. And without access to great tasting healthy stuff, you eat readily available junk food to satisfy your cravings. This is when homemade snacks come handy, which are way better than the store bought ones. I wouldn’t say “Spicy shankarpali or Spicy Diamond Cuts” are healthy and guilt-free, but you can enjoy them in moderation.

What is Shankarpali?

Shankarpali is a popular snack in India and traditionally made for festive occasions like Diwali, which comes in two flavours: savoury and sweet. I am far more partial to the sweet version as I have a sweet tooth!! Click here to get the recipe for sweet shankarpali!! Today I’m going to share the recipe for the piquant little diamonds – “Spicy shankarpali or Spicy Diamond Cuts”.

Relishing these treats opens up a floodgate of memories. For most Diwalis “Spicy shankarpali or Spicy Diamond Cuts”  & and “Sweet shankarpali or Sweet Diamond Cuts” had to be one of the items among the array of dishes that I used to prepare as a novice cook. Anyway, these are simple to make with readily available ingredients on hand.

When tired of eating sweets, we are always on the look out for spicy food on the platter.“Spicy shankarpali or Spicy Diamond Cuts”, a savoury snack can be a great saviour for people who are not fond of sweets! Crunchy from the outside and soft from the inside, these fritters are great tea time snacks. They are crispy and have that melt-in-your-mouth texture. Trust me!! these are so addictive that they are gone in no time. “Spicy shankarpali or Spicy Diamond Cuts” is very easy to make, appetizing and super delicious and is just the perfect munchies for relaxation. They are extremely rich in carbohydrates and make for a yummy salty treat.

Can you add other spices to the dough?

The spices you can add into the flour to make “Shankarpali”are innumerable. You can add green chilli paste, ginger garlic paste or ajwain (carom seeds), cumin seeds and so many more combinations. Once you have formed dough with the necessary ingredients, the next step is to knead it before thinly rolling it out, which is followed by cutting the dough into tiny pieces or according to your desired shapes.

Step-by-Step process to follow for

“Spicy shankarpali or Spicy Diamond Cuts”:

 

Preparing the Dough:

  • Sift flour. Add salt, butter red chilli powder and cumin seeds.
  • Rub the ingredients with the flour through your finger.

NOTE: You can also add the green chilli paste which I had added to the Chakkalu- Savoury crackers recipe.

  • Now start adding water little by little and knead to form soft and smooth dough.
  • Keep kneading the dough for about 5 to 10 minutes with pressure.

  • Keep the dough aside covered with a damp cotton cloth for about 30 minutes.

  • It’s time now to make big balls out of the dough and roll them with a roti roller.
  • Roll them into round shape similar to a roti but little thicker.

  • Take a knife and cut them into diamond shape.
  • For this make vertical and horizontal lines each measuring more than an inch diamond. Alternatively you could cut them into square shape.
  • Remove it to another plate in single layer and let it dry for at least 20 minutes. This step will help in making it crispy. Meanwhile roll another ball and prepare cuts.

Let’s Deep Fry:

  • Heat oil in a deep pan over medium heat for deep-frying.
  • Once the oil is hot, simmer and add the cuts to the oil.

  • Once the shankarpali are light golden brown in colour, remove them onto an absorbent paper napkin.

Vertical

  • Repeat the same procedure with the remaining dough.
  • Allow “Spicy shankarpali or Spicy Diamond Cuts” to cool down and then transfer to an airtight container.

Ingredients

  • 2 Cups All purpose flour
  • ½ to ¾ tsp Salt To taste
  • 1 tbsp Butter
  • 1 to 1 ½ tsp Red chilli powder

Notes

  • Adjust spice levels and seasonings to suit your taste.
  • Knead well to get a soft and smooth dough.
  • While rolling the dough ball, dust some flour to roll evenly.
  • Let the cut Shankarpali dry out for 20 minutes, it helps to make them more crispy.
  • Oil should be on medium-low heat while frying.
  • Cmpletely cool down shankarpali before storing. Should last for more than 10 days.
