Vegetable Masala Khichdi, a very popular One Pot Meal and ultimate comfort food that’s cooked in just about every Indian home and is prepared with rice and yellow lentils (Moon Dal). It has a medley of flavourful spices and goodness of vegetables.

This Dal Khichdi is so forgiving that it doesn’t necessarily ask for any side & you can be assured that all you need is a large spoon and a bowl to dig in. Or perk up the meal with some raita, yoghurt, papad or pickles alongside and enjoy!!

The first thing that pops up in our minds on hearing the word khichdi is sickness. We don’t want to eat it unless we are sick and we are forced to eat. In India, whenever someone is sick, Moong Dal Khichdi (bland version) is served to them as it is also recommended by Doctors. Unlike the bland version, if you try this recipe, you will fall in love with the simplicity of the dish with a medley of flavourful spices and all the goodness of fresh vegetables. It is even better when you make it with brown rice.

You can easily prepare Vegetable Masala Khichdi in a pressure cooker. You just need a few basic ingredients from your pantry and you are all set to make Vegetable Masala Khichdi in a jiffy. It’s filling, it tastes absolutely yum, power packed with nutrition and a perfect way to make your kids eat veggies. What else can you ask for!! You can add any vegetable of your choice but I have used whatever was available on hand.

Step-by-Step process to make

Vegetable Masala Khichdi:

Prep Work:

  • Combine both Rice and Moong Dal in the ratio given in the recipe card. Wash both until water runs clear with 2-3 exchanges of water. Set aside for 15-20 minutes till you get ready with the rest of the prep work.
  • Chop all the required vegetables, onion, coriander, mint, slit green chillies and set aside. Defrost peas and green beans.

Let’s start making Khichdi:

  • Keep all the dry spices for the seasoning ready.
  • Heat Oil in a pressure cooker over medium heat.
  • Add the dry spices to the oil and sauté till you get a nice aroma.

  • Immediately add in Onions and green chillies.
  • Sauté till the onions turn translucent.

  • Now add chopped tomatoes and ginger garlic paste.
  • Sauté and cook for about 2 minutes till the raw smell goes away and the tomatoes become mushy.
  • Add all the veggies, coriander, mint leaves and mix well.
  • Now add required salt, turmeric powder and Red Chilli Powder.

  • Add Rice-Dal mixture and mix well.

  • Add required water and adjust salt if needed.
  • Close the pressure cooker with the lid, cook for 1 whistle (or as per your pressure cooker you are using) and immediately turn off the heat.
  • Open the lid once the pressure subsides from the cooker.

Serving Suggestions:

  • Serve hot with any Raita, Kadhi or Chaas.
  • Today. I’m serving with Boondi raita and lemon wedges on the side.

Ingredients

  • 1 Cup Rice Sona Masoori
  • 3/4 Cup Yellow Moong Dal
  • 1 Tablespoon Oil

Dry Spices for Seasoning:

  • 1 Star Anise
  • 2 Bay leaves
  • 3 Cloves
  • 1 inch Cinnamon Stick
  • 2 to 3 Kapok Buds Marathi Moggu

Other Ingredients:

  • 1 Medium Onion finely chopped
  • 3 Green Chilies slit lengthwise
  • 1 Large Tomato diced
  • 1 tsp Ginger Garlic paste
  • 2 Carrots diced
  • 1 medium Potato diced
  • 1/4 Cup Frozen Green Peas
  • 1/4 Cup Frozen Beans
  • Handful of Mint leaves
  • Handful Fresh Coriander finely chopped
  • 1/4 tsp Turmeric Powder
  • 1/2 tsp Red Chilli Powder
  • Salt to taste
  • 4 to 5 Cups Water

Instructions

  • Combine Rice and Moong Dal and wash until water runs clear.
  • Heat Oil in a pressure cooker over medium heat.
  • Add the dry spices to the oil and sauté till you get a nice aroma.
  • Immediately add in Onions and green chillies and sauté for 1 minute.
  • Now add chopped tomatoes and ginger garlic paste.
  • Sauté and cook for about 2 minutes.
  • Add rest of the veggies, salt, turmeric powder and Red Chilli Powder, Rice-Dal mixture and mix well.
  • Now add required water and adjust salt.
  • Close the pressure cooker and cook for 1 whistle and turn off the heat.
  • Open the lid once the pressure subsides from the cooker.
  • Serve hot with any raita, Kadhi or Chaas.

Notes

  • Khichdi is usually and soft mushy, so you can use 5 cups of water for a liquid consistency. If you want it to be a little dry, then use 4 cups of water for the given measurements of Rice and Dal.
  • You can substitute rice with basmati rice,  brown rice, rice rava or quinoa.
  • Adjust spices according to your taste.
  • You can use any vegetable of your choice.
  • You can also make this recipe using Tur dal (split pigeon peas) or whole moong beans with husk.

    Love this kind of one pot dish Padma particularly in summer hot times.
    Using moong dal, rice with varieties of veggies it is definitely a wholesome meal. Adding to that your clicks are tempting to anyone to make some right away 😉

    A one pot meal, I love making khichdi with vegetables. Its so easy to make in a pressure cooker. We always add loads of veggies as that’s a good way to get kids and the elderly to have their vegetables. Love the beautiful presentation.

    Moong dal khichdi used to be seen as light food & served to unwell. Looking at your recipe & pictures, this looks to be a star dish of some restaurant carrying all the goodness. You made and presented it so beautifully.
